Raw Pomegranate, Persimmon, Pumpkin & Coconut Parfait

Ingredients:

  • 1 organic ripe pomegranate
  • 2 very ripe persimmons
  • 1/2 raw cubed sugar pumpkin
  • 3 tangerines
  • Raw meat from 1/2 Jamaican coconut
  • 1 piece of raw ginger
  • 4 Medjool dates
  • Cinnamon powder
  • Fresh sage leaves
  • 4 tablespoons pure water
  • Pinch of pumpkin spice powder

Method:

  1. Scoop the meat from the raw Jamaican coconut. In the Vitamix or food processor, process raw coconut meat and dates with 2 tablespoons of pure water. Transfer to a dish.
  2. Place pomegranate seeds at the bottom of your glasses, then pour over half of the white coconut mixture.
  3. Cut sugar pumpkin in half, scoop the seeds, then peel the skin off and cube the pumpkin.
  4. Next in the Vitamix, mix raw cubed pumpkin, tangerines, persimmons, ginger, cinnamon and pumpkin spice with 2 tablespoons of pure water.
  5. When all mix well, add the rest of coconut mixture. Layer over the white mixture, then top it off with pomegranate seeds, tangerine and fresh sage leave.
  6. Enjoy!
