    How do we get raw cheeses in the US? If that means unpasteurized, aren’t they illegal?

      I was told at Whole Foods the best I could buy was organic and check to see how long they have been aged as that too will make a difference.

      Natural Grocers carries a couple of brands of 100% Grass Fed, Raw Cheese. Read the labels because not all cheeses from the same company will be raw.

        Also in Colorado and other states you can join a dairy co-op and purchase raw dairy products from them because you “own” a share of the cow. They are also are a good source of grass fed and free range meat.

      It is important to remember that the reason why raw milk and cheese were prohibited is that unless the farm and manufacturers are extremely careful, there is a risk and the effects can be dangerous. It is best to do your own research to make a decision that you feel comfortable with. There are some great nut based “cheeses” you can make, and some foods that offer the taste of cheese without the inflammatory effects of cheese such as nutritional yeast. Reducing the amount of dairy in general can really help lower your inflammation as well.

    I’m not really a pizza person but I like this idea. Will certainly try it. I’m a real fan of raw cheese and cauliflower so not too hard.

    would like an alternative for Tortillas. maybe something with coconut wrap. Cannot get chia bran here. not wild about flax. Any ideas?

    I’m a bit confused, on the picture, it looks like there is melted cheese on the pizza and cooked veggies, but in Jon’s video its all raw veggies and cheese and it doesn’t go back in the oven, so it’s more like a salad. Can you claify if it goes back in the oven or not?

      You do need to put the pizza back in the oven to melt the cheese with the toppings.
