Something to look more closely at is the issue of fructose. Fructose (not as the combined glucose/fructose in high fructose corn syrup, but simple fructose) does NOT trigger insulin. It is processed through the liver the same as xylitol.

Hi Jon, this is a great interview, really useful thanks. Just on an aside, here in the UK grated cheese (shredded) doesn’t have cellulose in it, it is potato starch – so a ton of extra naked calories (sugars). The justification is that it stops the cheese from sticking together (anti-caking agent). You just have to be so conscious of even innocent-seeming foods.
Also, here in Europe, farmers aren’t allowed to feed animals hormones or antibiotics thankfully, or use GM foods, so at least that’s something not to have to worry about and for which I am very grateful for, especially when I hear the effects they can have on interviews such as this one. I wish we had more farmers markets though – I am very envious of you guys who have one locally.

Perhaps there is a really good organic grocer / fruit shop nearby instead? Another great option is to find out if you can purchase your fruit and vegetables from online Farming Co-ops. Would either of these options be more feasible for you?

This was super exciting to listen to! And a little bit overwhelming…i think I’ll need to listen again to absorb all this fascinating info. A question..so is xylitol still ok to use or can a specific brand of stevia be recommended because just experimenting with these sorts of products is costly.. Thanks for the interview, I loved it 🙂

I was fascinated with the conversation on cellulose which I just discovered is being used as microcrystalline cellulose in my Trader Joe’s vitamins as well as a very expensive Be Well (Dr. Frank Lipman) vitamin that I purchased. Disturbing to say the least and I have written an email to Be Well inquiring why they would use a counterintuitive filler like this in their products.
