This juice recipe is the perfect marriage of zesty and slightly sweet, and it’s one of my favorite elixirs. Like most of its fellow green leafy vegetables, arugula is high in vitamin K, which supports bone health. It’s also rich in glucosinolates, sulfur-containing compounds that can help release the vegetable’s phytochemicals. Arugula is also a lovely addition to green juices because it’s got a slightly spicy flavor, especially when it’s purchased at the height of freshness. Baby arugula, which is carried in grocery stores year-round, is more mellow.

Pro Tip: If this juice isn’t quite sweet enough for you, you can try using two pears in place of the tart Granny Smith apples.

Ingredients:

  • 2 cups green cabbage, tightly packed
  • 2 cups arugula, leaves and stems, tightly packed
  • 1 small cucumber
  • 2 large stalks celery
  • 2 Granny Smith apples
  • 1-inch piece ginger, peeled

Method:

  1. Wash and prep all ingredients.
  2. Juice all ingredients.
