Wistful Walnut Pear Salad

Yield 2 servings
Ingredients:
- 2 pears, cut into bite-sized pieces
- 1/4 cup walnuts, halved and toasted over the stove
- 2 dates, pitted & chopped fine
- 2 cups salad greens of your choice
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- sea salt, to taste
- ground black pepper, to taste
Method:
- In a small bowl, whisk the vinegar, mustard, salt and pepper together.
- Toss greens, pears, walnuts and dates in a large serving bowl.
- Mix in the dressing or serve on the side.
- Bon appétit!
