Vegan White Bean Waffles

Method:

  1. Start with making the vegan egg. Put the chia seeds in 1/2 cup of water and let sit for at least 30 minutes to let them develop a nice creamy consistency (if you have the time let it rest overnight, stir occasionally).
  2. Add the chia mixture, beans, banana, psyllium seed husk, salt, baking powder, organic soy milk and vanilla powder into a medium-sized bowl. Mix with a hand blender or in a mixer until you have a nice waffle dough.
  3. Add the coconut oil and bake the waffles in a waffle iron.
  4. Enjoy with toppings of choice!
