Vegan White Bean Waffles

Ingredients:
Vegan Egg:
- 1 tablespoon chia seeds
- 1/2 cup water
Waffle Dough:
- 100 grams (0.42 cups) white beans
- One banana
- 1 teaspoon psyllium seed husk
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/3 cup organic soy milk or plant-based milk of choice
- A pinch of vanilla powder
- 1 tablespoon coconut oil
Method:
- Start with making the vegan egg. Put the chia seeds in 1/2 cup of water and let sit for at least 30 minutes to let them develop a nice creamy consistency (if you have the time let it rest overnight, stir occasionally).
- Add the chia mixture, beans, banana, psyllium seed husk, salt, baking powder, organic soy milk and vanilla powder into a medium-sized bowl. Mix with a hand blender or in a mixer until you have a nice waffle dough.
- Add the coconut oil and bake the waffles in a waffle iron.
- Enjoy with toppings of choice!
