Spinach, Avocado, Mandarin & Pomegranate Salad

 Ingredients:

 Spinach, Avocado, Mandarin & Pomegranate Salad:

  • 4 cups baby spinach
  • 1 sliced ripe avocado
  • 1 mandarin divided in sections
  • seeds of 1 pomegranate
  • 1 inch peeled fresh ginge

 Ginger Lime Vinaigrette:

  • juice and zest of 1 lime
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 cube frozen cilantro
  • sea salt and pepper to taste

Method: 

  1. Plate the baby spinach, creamy sliced avocado, plump juicy mandarin slices & pomegranate seeds.
  2. Sprinkle some chia seeds on top and dress with a homemade Ginger Lime Vinaigrette.
  3. To make the dressing, combine all ingredients and blend.
  4. Drizzle over the salad and enjoy!
