Roasted Strawberry Ketchup

Ingredients:
- 1 pound strawberries, trimmed and quartered
- 1 pint cherry tomatoes, halved
- 1-2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
- 1 teaspoon balsamic vinegar (optional)
- 1 teaspoon agave, maple syrup, or other liquid sweetener (optional)
Method:
- Preheat oven to 400 degrees Fahrenheit.
- Toss strawberries and tomatoes with olive oil, salt and pepper and transfer to a parchment lined baking sheet.
- Roast for 40-45 minutes.
- Transfer the roasted fruit to the food processor, and process until smooth. If it’s too thick, add a tablespoon or two of water to thin.
- Taste it. Does it need a bit more tang? Add some balsamic. Does it need a bit more sweetness? Add a little of your favorite liquid sweetener.
- Season with salt and pepper, to taste.
