Roasted Strawberry Ketchup

Method:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Toss strawberries and tomatoes with olive oil, salt and pepper and transfer to a parchment lined baking sheet.
  3. Roast for 40-45 minutes.
  4. Transfer the roasted fruit to the food processor, and process until smooth. If it’s too thick, add a tablespoon or two of water to thin.
  5. Taste it. Does it need a bit more tang? Add some balsamic. Does it need a bit more sweetness? Add a little of your favorite liquid sweetener.
  6. Season with salt and pepper, to taste.
