Pumpkin Spice Waffles

Ingredients:

  • 5 tablespoons ghee butter
  • 1/2 cup pumpkin puree
  • 8 large eggs
  • 1/3 cup maple syrup
  • 1 cup canned coconut milk
  • 1 tablespoon vanilla extract
  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon Celtic sea salt
  • 2 tablespoons pumpkin pie spice blend
  • For Serving:
  • 1 cup maple syrup, for drizzling
  • 4 tablespoons unsalted butter (optional)
  • Method:

    1. To mix either the regular or dairy-free version: Whisk wet ingredients in a large mixing bowl until incorporated. Whisk dry ingredients in a medium mixing bowl. Add the wet ingredients to the dry ingredients and whisk until smooth. Let batter sit for 5 minutes.
    2. Cook waffles on a waffle iron* according to manufacturer’s instructions. Serve with maple syrup and butter (if using).
