Grilled Lemon Chicken with Tomato and Feta Salad

Ingredients:
For the Marinade:
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 cup olive oil
- 4 boneless, skinless chicken breasts
For the Salad:
- 2 cups cherry tomatoes, each cut in half
- 1/2 cup crumbled feta cheese
- 1/2 teaspoon chopped oregano leaves
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- Celtic sea salt and freshly ground black pepper
Method:
- Whisk 1 tablespoon lemon juice, garlic powder and olive oil in a small measuring cup. Please chicken breasts in a single layer in a large baking dish. Pour marinade over the chicken and let the meat marinate for 10 minutes at room temperature.
- Preheat the grill to medium. Grill chicken for 4-5 minutes per side until cooked through.
- Toss tomatoes, feta, oregano, lemon juice and olive oil in a medium bowl. Season with salt and pepper to taste. Serve salad on top of chicken.
