Grilled Lemon Chicken with Tomato and Feta Salad

Method:

  1. Whisk 1 tablespoon lemon juice, garlic powder and olive oil in a small measuring cup. Please chicken breasts in a single layer in a large baking dish. Pour marinade over the chicken and let the meat marinate for 10 minutes at room temperature.
  2. Preheat the grill to medium. Grill chicken for 4-5 minutes per side until cooked through.
  3. Toss tomatoes, feta, oregano, lemon juice and olive oil in a medium bowl. Season with salt and pepper to taste. Serve salad on top of chicken.
