Flourless Cranberry Chocolate Chia Cookies

Yield 10 servings
Ingredients:
- 1 medium ripe banana, mashed
- 1/2 cup creamy almond butter
- 2 tablespoons chia seeds
- 2 tablespoons cacao powder
- 15 drops liquid stevia (or 1/4 cup coconut sugar, optional for sweetness)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup cranberries, chopped (I used frozen)
- 1/4 cup vegan chocolate chips (optional)
Method:
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with a silipat or spray with cooking spray.
- Mash banana in a medium bowl. Add almond butter, chia seeds, cacao powder, stevia, vanilla, baking soda and salt. Stir well to combine. Fold in cranberries and optional vegan chocolate chips.
- Using wet hands, roll dough into about 10 balls. Flatten slightly with hands.
- Bake for about 10 minutes, or until set.
- Store in refrigerator in an air-tight container.
