Spinach, Avocado, Mandarin & Pomegranate Salad

Ingredients:
Spinach, Avocado, Mandarin & Pomegranate Salad:
- 4 cups baby spinach
- 1 sliced ripe avocado
- 1 mandarin divided in sections
- seeds of 1 pomegranate
- 1 inch peeled fresh ginge
Ginger Lime Vinaigrette:
- juice and zest of 1 lime
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 cube frozen cilantro
- sea salt and pepper to taste
Method:
- Plate the baby spinach, creamy sliced avocado, plump juicy mandarin slices & pomegranate seeds.
- Sprinkle some chia seeds on top and dress with a homemade Ginger Lime Vinaigrette.
- To make the dressing, combine all ingredients and blend.
- Drizzle over the salad and enjoy!
