There is a book called Nourishing Traditions by Sally Fallon and Mary Enig that has a section on naturally fermented foods detailing why we need them and how to produce them. Naturally fermented sauerkraut tastes wonderful. The commercially produced sauerkraut has no probiotic benefit and doesn’t taste very good (in my opinion). Most traditional diets have naturally fermented foods as condiments in each meal. These foods aid in digestion as well as the other benefits commented on in the video.

I just recently cured an UTI with high doses of D-Mannose (5 grams) every 3 to 4 hours for three days. It is a natural product and has none of the side effects e.g. killing friendly bacteria. I was skeptical at first, but did some research as I was looking for a natural cure and I didn’t want to see a doctor. It worked and I highly recommend it as you have nothing to lose except your UTI of course!
I have just started making cultured food. How much should one have in a day? I am not sure whether to take a spoonful or have a helping of the usual amount of veg. I use kefir on fruit for breakfast.
I am on a low dose antibiotic for the foreseeable future for recurrent UTIs. I don’t like taking it but the alternative is not good either!!

You can eat cultured foods like any other vegetable. There is no limit. They should help with your UIT’s too.
Like Jon has commented its totally up to what amount you want to take a spoonful a day. Again like cultured food you have to aquire a taste for it and with fermented maize its really a treat.
I’m doing Donna Schwenks ‘Trilogy’ of kefir, kombucha and fermented veggies and I feel great!

Comment – Rarely I have a need to take antibiotic. I build my immune system with daily intake of Colostrum pills.
Whenever there is a systemic need for antibiotic I take a few drops of oil of oregano in a cup of warm water, without side effect.
When a throat infection is showing up I apply a few drops of propolis tincture directly onto the infected spot, the relief is instant.
Question: When you lose a substantial amount of fat, what do do with the extra left over skin?

In Jon´s case, he lost all of his weight gradually over two years.
That coupled with eating live, healthy, vibrant foods, helped his
skin slowing adjust to his new body. Every person´s body is
different, however, but it is not impossible to lose weight and have your skin adjust properly.

Great post. I have been on antibiotics for 2 years full time– some of them IV. They say I might be on them the rest of my life. I was bit by brown recluse spider and the poison went to my knee replacement. After the 1st surgery they said I might lose my leg. So taking antibiotics isn’t as bad as that. I eat very well– follow Jon’s advice. I drink green juice every day; I eat lots of vegetables and fruits…and of course nuts, seeds, and some form of protein; I do probiotics, eat kimchi; I exercise or play 1.5-2 hrs/day; I have committed to a daily practice of visualization and meditation and I STILL can’t lose weight– because of the antibiotics. The infectious disease folks might just be afraid to take me off and there’s probably no current scientific research yet. My infectious disease doctor might be open if I could send him an mp3, but if I send him to the site, he wouldn’t listen.

Just remember that healing takes time and it looks like your body is still trying to protect itself from what happened to you. When your body feels safe it can start to let go of the weight. It sounds like you are on the right path! Keep up the good work!

Sorry, I don’t find this helpful. How can my body heal from the toxicity while I continue to take antibiotics? How can my body heal?
Unfortunately fermented maize is only for some and this was a source of my forefathers in the past and 160 years later we still eat it. In order to heal your body continue your antibiotics.
Since the detox ACV became my go to “medicine” for my kids through the winter. I started giving them 4oz of water with 1/2 tsp of ACV and raw honey first thing in the morning and also right before their dinner. I am not kidding that whenever they seemed like the were coming down with something it either never transpired or it cut the length of the cold down to 2 days….for me this was a wonderful natural way to help them flush out their little systems.
Given my questions below, I am also wondering on your perspective on giving the amount I talk about to young children (10 and under). Is it something we can free flow with or should I be careful to overdo it with ACV on their little digestive tracts?
Apple cider vinegar, if it’s raw is full of friendly bacteria. It’s truly beneficial. I don’t think you’re overdoing it at all taking 4 glasses a day. But if your body starts to rebel against taking it at any time, I would listen. Know one knows better than your body and as you get healthier and healthier, your body will become an excellent guide as to whats best to take and what amounts.
Thanks Jon. What about for young children? Does the same apply or does their body get dependent on the vinegar to cleanse them daily and not work on its own to detox? Please see above for how much I have been giving them daily through the winter and it really has helped to keep viruses at bay!
Since participating in your detox last November I really adopted Apple Cider Vinegar into my daily routine, likely drinking 4 glasses of water with 1 tsp of ACV each. Is it possible that you can have TOO much ACV and your body can become intolerant to it?
My father just shared with me yesterday he was concerned that I was drinking so much water with vinegar and pointed out that no other mammal has vinegar in their natural diet. I thought this would be a great thing to get your perspective on (ie, this wasn’t found on an island thousands of years ago).

Okay so I have started working with Magdalena on my Hashimoto’s and Rosacea remission mission and we have started to pinpoint some things to test taking out of my diet to see if it helps. The first suspicion after following my health history and food journal for a week is that I might have a histamine intolerance, which means cutting out anything fermented, all vinegars and other foods like tomatoes, citrus (my known rosacea trigger!) and chick peas.
As a trusted source in my life, I really wanted Jon’s thoughts on this question: I know how incredible fermented foods like sauerkraut and kimchi are for our gut and I also know how detoxifying it is to wake up and have 2-3 glasses of ACV…..so I am a bit concerned in cutting these things out and I just wanted your thoughts on what OTHER non histamine foods might have the same effects (detoxifying and replenishing healthy intestinal flora) while I am doing this 30 day test on a possible histamine intolerance. I am still of course currently taking my probiotics daily.
when I say 2-3 glasses of ACV I of course mean 2-3 glasses of WATER with 1 tsp of ACV each 🙂

If you’re working with Magdalena and she is telling you to reduce your apple cider vinegar intake, that’s different. I would be curios to now what her reasoning is. But in the mean time, while you’re working with her, I would follow her advice. Let me know how it goes.

Thanks Jon. I am removing it because we are suspicious of me having a histamine intolerance which means that fermented foods, vinegars as well as other foods high in histamines might be the reason why my rosacea is still acting up even though I have taken out all the big 10 food allergy culprits from my diet. So Magdalena is also a big ACV fan for daily detoxification and alkalining of water, but just for my bio individuality we are trying to figure out what I am still reacting to.
My question to you is, aside from lemon, ACV and fermented foods do you know of any other thing I can have that would have the same detoxifying and replenishing healthy intestinal flora effects? I am really missing having them and just wanted additional insight on other things I can eat while I test out this possible histamine intolerance. Thanks!
Marisol that’s really interesting. I have had rosacea for years and just recently it’s gone from just a smathering on my cheek bones to my entire cheek! And it’s become raised and bumpy. Not sure what’s up there…but your point about vinegar is what interests me. I know personally when I have a salad with vinegar and oil, it really triggers a major sugar craving for me. I have always suspected vinegar (I generally use a balsamic) but it could be that I’m allergic or sensitive to the histimines in there…I’ll have to do some research on that. Thanks for sharing!

One of my new healthy foods to make is coconut macadamia yogurt, of course with raw and organic ingredients, and I heartily recommend making this delicious fermented food also with raw organic almonds and brazil nuts, when available.

I keep it simply, when the maize is ready to pick you get 15-20 cobbs, put it into a sack, or muslim cloth with 2-3 medium size rock/stones, tie the top of sack/muslim up. You may have to make a meshing net wrap for your sack to keep the water rats at bay. Get a stirdy stick and thin wire. Attach the wire to the sack/muslim and then to the stick. You then take this to a nearby spring, stream, brook, or lagoon. Wedge the stick into the side of (spring, stream, brook, or lagoon) so that when you place the sack/muslim into the water it will sink down to the bottom, but the stick thats been wedged to the side of the waters edge will be an indicator to where you placed your maize. This stays submerged in the water for 3-6 months. You can check its progress on a monthly bases and what you are checking for if your maize has gone soft and if you can smell the decaying process. By your 5th month its ready to pull out of the water. By this time the smell will be pungent and you have time to take the husk of the maize. You will also see that the maize will be EASY to take off the cobb. Once you have taken the maize off the cobb, wash in a bowl till clean then seive. Put 1 cup water into a small pot. Once boiling put a cup of maize to the mix. Let it boil for 5 minutes then turn the heat down and leave it simmer for 25 minutes. Once its cook server with cream. By this time your neighbours and family would know what you are having for desert with the pungent smell kaanga wai (fermented maize) filling the house.

Many basic filters remove the majority of chlorine, it depends on the filter as well as your local water supply. But most people are ok with carbon filters.
